The Simple Woman’s Daybook

For today...
Sunday, November 15, 2020

Looking out my window...

I am thinking...
Of my mom’s upcoming surgery.

I am thankful for...
Safe travel on the awful road conditions we have had.

One of my favorite things...
Christmas music & a cup of tea.

I am creating...
Photo albums.

I am wearing...
Black cargo pants, black long sleeved shirt.

I am hearing...
Christmas music.

I am reading...
The Lost World by Arthur Conan Doyle

I am learning...
That I need to improve on myself-care.

Around the house...
Indoor Christmas decorations have started to go up.

In my kitchen...
Minestrone soup for lunch.

In my garden...
Lots of snow.

Pondering these words...
To control our passions we must govern our habits,
And keep watch over ourselves in the
Small details of every day life.
~Sir John Zubbock~

A few plans for the upcoming week...

~Spending time with my parents~

The Simple Woman's Daybook

For today...
Wednesday, April 10, 2019

Looking out my window...

I am thinking...
Of plans for Easter weekend
and outdoor spring cleaning we need to do.

I am thankful for...
Warmer weather.

One of my favorite things...
Sunshine.

I am creating...
Working on Easter cards.

I am wearing...
Blue jeans, navy blue tank with crochet top &
navy blue & white striped cardigan.

I am hearing...
The radio playing & the air purifier.

I am reading...
The Champagne Queen by Petra Durst-Benning
and
The Rest of God by Mark Buchanan

I am learning...
That it is important to keep growing & learning,
no matter what age.

Around the house...
It has been quiet this week.

In my kitchen...
Lemon Cake with Cool Whip Topping

In my garden...

Pondering these words...
"Drivenness erodes purposefulness..
~From "The Rest of God" by Mark Buchanan

Cheesy Chicken Pasta in the Crockpot

This is one of my daughter's favorite recipes
and I like it because I can make
extra to put in the freezer
for a future meal.

Ingredients
1 small onion, diced
1 green pepper, chopped
1 tsp. garlic powder
1 Tbsp. Italian seasoning
Sprinkle of Seasoning salt & pepper
3 chicken breasts, cubed
1 can cream of mushroom soup
1 box (340 g) rotini pasta
3 cups grated cheese
Parmesan Cheese
Panko Bread Crumbs

Directions
Place onion, green pepper and cubed chicken breast
in the crockpot.

Sprinkle with garlic powder, Italian seasoning
& salt & pepper.

Mix together mushroom soup and
1 cup of grated cheese.

Cook on high 3-4 hours.
Stir.

Cook pasta in boiling water in pot on stove.
Add to crockpot with remaining grated cheese and stir.
Pour into a casserole dish.
Sprinkle with Parmesan cheese & bread crumbs.

Note: If I am making this for the freezer,
I mix together the crockpot chicken & pasta,
put it into the container for the freezer,
sprinkle with Parmesan cheese, bread crumbs
and then top with the remaining cheese.
