Turkey Chili Bake



I'm always on the lookout for quick recipes
that easily make a double batch
and that freeze and reheat well.
 This Turkey Chili Bake
hits all of those
and is one of my family's favorite meals.

Ingredients
2 lbs. ground turkey
2 pkg. taco seasoning mix
1 can (19 oz) black beans, drained & rinsed
2 cans (11 oz) peaches & cream corn
2 jars (16 oz) mild salsa
4 cups Mexican blend shredded cheese


Heat oven to 350F.
Spray two 8x10 pans with cooking spray.
In a non-stick skillet, cook turkey
until no longer pink.
Add taco seasoning & blend well.
Add beans, corn & salsa; mix well.
Divide between both pans.
Top with cheese.
Cover pans with tinfoil sprayed with baking spray.


At this point you can either bake or freeze.
Bake at 350F for 40-45 minutes.

To bake from frozen cook at 350F for 1 1/4 - 1 1/2 hours.


There are so many variations that you can do with this recipe.
You can switch up the salsa to add more kick.
I've also used Italian cheese or marble cheese
and both are super delicious.


I also like to make a double batch of cornbread muffins,
one for the meal and one for the freezer.
My hubby prefers to eat his in a wrap,
which is also a good way to eat leftovers.


Whichever way you decided,
this is quick, easy & delicious.

Well, spring is officially here
although it doesn't quite feel like it yet
as we still have a lot of snow on the ground.
My menu this week incorporates

like spinach & asparagus.
I can't wait until I can pick my own though!

Broccoli w/cheese sauce
Tossed Salad
Easter Cupcakes

Roasted Turkey
Mashed Potatoes
Stuffing
Gravy

Weekend Ramblings


This past weekend hubby & I went for a weekend ramble.


We love to get out and explore new trails
and take photos as we ramble along.


It is so relaxing just to get outside
and explore.


This time we explored the
Elizabeth Hall Wetlands.


The river bottom is one of our favorite places to go
but we have never explored
the opposite side before.


The Elizabeth Hall Wetlands is a nature reserve
with viewing areas and blinds to watch the wildlife.


It was still pretty frozen over
except in one little corner.


I was surprised to see so many ducks,
a sure sign spring is closer than it seems.


Not many people seem to have been through this area
and it was neat to see so many animal tracks in the snow.


We are looking forward to going back
and exploring this once the snow is gone.

Early Spring Wreath & Evening Work


What a winter we have been having.
It has been hard to get into spring mode
while everything is still buried under a few feet of snow.
It is very unusual for us for this time of year.


With the snow, cold weather and short days
I have to admit that all I want to do
when I get home from work is be a couch potato.


But, I want to be more productive
so I am trying to do a small evening project each evening.
Did I mention I am a morning person?
This evening project is a challenge for me
but when I get it accomplished
I feel awesome!


This evening's project was to make a wreath
for my back door.
I wanted something that said "early spring".
I am not ready to do florals yet
with all the snow.
It just doesn't feel right.


I did, however, fall in love
with the pussy willows
and light shades of green
while I was browsing at Michaels.


I was very pleased with the finished look
and it feels just right
for the season we are currently in.
