The sun is shining and the fall colors are beautiful
against the clear blue sky.

I am thinking...
Of how we have not had many nice fall days
and snow is once again in the forecast for this next week.

I am thankful for...
Family time.

One of my favorite things...
Playing Uno with the family.

A Christmas gift list.

I am wearing...
Red jeans, Blue & burgundy floral peasant shirt.

I am hearing...
Thumping from the basement.

I am reading...

That I need to allow myself time for me.

Around the house...
Getting ready for Thanksgiving dinner.

Spring Sidetable Vignette


With our backyard still buried in snow
and snow in the forecast
for almost every day
I needed to put some touches
of spring around the house.


We have a little table that sits between
our chairs and I decided to cover it
with a spring cloth.
I just love the flowers on it.


We use this table to charge our devices
and the cords can be messy looking.


But we pull them through the base of our vintage lamp
and can tuck them away
when we don't need them.


I added a vase
with some pussy willows
and greenery.


And a little white bird.


On the other side of the lamp
I added a porcelain lily
and filled it with some
colored glass painted eggs.



Every spring we have an owl
that comes to our neighborhood
so I included my white porcelain owl
in my spring décor.


Our little Storm Glass
is fun to watch
and surprising in how accurate it is.



All put together our little side table
is ready for spring
even if it doesn't seem like it outdoors quite yet.

Simple Spring Tablescape


Sometimes it is nice to have a simple little tablescape.


For this tablescape I started off with one of my favorite
pale green tablecloths
and a crocheted linen
given to me as a gift.


A simple white jug
with pale green and white tulips.
As much as I adore fresh flowers
there are too many people in our house
with allergies so I try to get
good quality fake flowers.


Add my everyday dishes.


And some floral napkins
that were gifted to me
and a pale green napkin ring.


A vintage glass with a hint of pink around the bottom is added.



And it is a quick and simple everyday table
with a touch of spring.

It's hard to believe it is April already
and we have another heavy snowfall warning for tonight.
There is something about cold days
and warm home-cooked meals
that goes together so well.
Here's what I have planned for this week.

Turkey Chili Bake



I'm always on the lookout for quick recipes
that easily make a double batch
and that freeze and reheat well.
 This Turkey Chili Bake
hits all of those
and is one of my family's favorite meals.

Ingredients
2 lbs. ground turkey
2 pkg. taco seasoning mix
1 can (19 oz) black beans, drained & rinsed
2 cans (11 oz) peaches & cream corn
2 jars (16 oz) mild salsa
4 cups Mexican blend shredded cheese


Heat oven to 350F.
Spray two 8x10 pans with cooking spray.
In a non-stick skillet, cook turkey
until no longer pink.
Add taco seasoning & blend well.
Add beans, corn & salsa; mix well.
Divide between both pans.
Top with cheese.
Cover pans with tinfoil sprayed with baking spray.


At this point you can either bake or freeze.
Bake at 350F for 40-45 minutes.

To bake from frozen cook at 350F for 1 1/4 - 1 1/2 hours.


There are so many variations that you can do with this recipe.
You can switch up the salsa to add more kick.
I've also used Italian cheese or marble cheese
and both are super delicious.


I also like to make a double batch of cornbread muffins,
one for the meal and one for the freezer.
My hubby prefers to eat his in a wrap,
which is also a good way to eat leftovers.


Whichever way you decided,
this is quick, easy & delicious.
