In the Kitchen this Week

Last weeks menu plan worked with with my adjusted work schedule.
It’s going to be another week of having to work the closing shift.
I did some lunch prep for the week.




And stocked up the fruit bowl.


So here is the menu plan for this week.

Home fries
Coleslaw

Ham
Scalloped potatoes
Cheesy broccoli
Carrots

That it will a long week.

I am thankful for...
Weekends to rest.

One of my favorite things...
Sunshine.

Scrapbooking pages.

I am wearing... 
 Grey joggers and a grey & white block sweatshirt.

I am hearing...
The TV.

I am reading... 
The Lords of the North by Bernard Cornell

I am learning...
That rest is more than sleep and I need more rest.

Around the house... 
Nothing much this weekend.

Waffles and fresh strawberries.

In my garden...
Things are beginning to poke through the ground.

Errand Day

 Today was errand day.
Once a month or so we take a day
to go to the city and catch up on those
non-urgent little odd and end errands
that we keep putting off during the week.

I also like to combine it with brunch out,
which is something I really miss doing 
since Covid began.

This time we did a McDonalds drive-thru for our “brunch”.
We did our first stop and it surprised me how empty the shelves were.
It reminded me of when Covid first started.


Hubby had a rain check on some outdoor lights
and they had finally come in so we went and picked them up
before they were out of stock again.
I think they will go up on our garage.


We also wanted to check out a new bakery
but the line up was out the door and down the block
so we will save it for another time.
We did check out a new coffee shop
where they bring their own coffee beans 
from their farm in Nicaragua and roast them here.
Trying new beans and roasts is something
new hubby and I have discovered
and have been enjoying discovering new flavours.



Finally, we finished off our day
with a trip to our favourite greenhouse.
We were hoping to pick up some shrubs
but we are a few weeks too early.
We did get a catalogue though, and of course,
we couldn’t leave without at least one plant.


Errand day has turned into a fun way to get those little errands out of the way.

In the Kitchen this Week

 This week is going to me a bit of a challenge dinner wise.
My coworker has been put in quarantine
Since his girlfriend tested positive for Covid
Which means I will be working the closing shift
For at least two weeks.
That could make for some late evenings
And not a lot of time for dinner prep.
So, here is the plan.

Monday
Cesar Salad
Garlic Bread



Tuesday
Leftovers

Wednesday
Turkey Chili (from the freezer)
with Wraps
Southwest Salad


Thursday
Fish and Chips
Coleslaw

Friday
Pizza and Movie Night

Saturday
Cabbage Rolls
Buns


Sunday
Roast Beef with
Roasted baby potatoes and carrots
Beef Gravy
Buns
Corn

This seems doable this week.
