Tuscan Tilapia


My daughter is not a fan of fish
so I am always on the lookout for fish recipes
that she will find bearable to eat.
When I saw this recipe for Tuscan Tilapia
at Kraft Canada I thought it might be something she would like.
It also uses the new Cooking Creme that I have been wanting to try.
Well, let's just say I knew I had a winner
when my daughter went back for seconds,
seconds, can you believe that!?!
That is completely unheard of until now.
This recipe is definately a keeper for me.


Ingredients
1 Tbsp oil
4 tilapia fillets
1 tub Tomato Basil Cooking Creme
1/3 cup milk
2-2/3 cups hot cooked long-grain white rice
2 cups frozen peas


Heat oil in large nonstick skillet on medium heat.
Add fish; cook 3 minutes on each side or until fish is
browned on both sides and easily flakes with fork.
Remove from skillet; cover to keep warm.


Add Cooking Creme and milk to skillet; cook and stir 2 minutes.
Remove 1/2 cup Cooking Creme mixture, set aside.
Add rice and peas to remaining Cooking Creme mixture in skillet;
cook and stir 3 minutes or until heated through.


Spoon rice mixture onto platter; top with fish and reserved sauce.
Delicious!!

  6. Thanks for the recipe Alana. I've tried the cooking creme on chicken, but haven't thought to use it on fish. Glad to hear it's just as good. I'll keep that in mind the next time I buy the creme.

  7. I'm going to tell you a secret..okay, it's not a secret, but I don't like fish. I don't like the smell of fish. I don't like the taste of fish. I don't eat fish. I may have been known to gag at the thought of fish. That said, the sauce sounds good. You still won't find me making fish myself, but if EVER I am served fish and it comes with this sauce, I promise I will try it. Maybe just a bite for starters, because I'm really tentative about fish, but I think it sounds like it would make fish bearable to me too. Good work getting your daughter to eat it. You are a miracle worker. You may have saved her from a life of begging off when fish is served. That's no small feat!
