The Simple Woman's Daybook



For today... Saturday, March 30, 2013

Outside my window... White & gray fluffy clouds are moving in covering the blue sky.  Possible rain showers are on the way.

I am thinking... That it is only a few weeks until my daughter is home for summer break.

I am thankful for... The Easter season.

From the kitchen...
~Sunday: Turkey, Stuffing, Mashed Potatoes, Gravy, Buns, Glazed Carrots, Broccoli & Cauliflower, Asparagus w/Lemon Sauce, Tossed Salad, Lemon Meringue Pie, White Chocolate Brownie Pie
~Monday: Parmesean Fish, Basil & Garlic Butter Pasta, Garlic-Pepper Green Beans, Buttered Carrots, Salad, Chocolate Eclair Squares
~Tuesday: Oven Baked Pork Chops, Parmesean Potatoes, Broccoli & Cauliflower in cheese sauce, Tossed Salad, Rocky Road Cake
~Wednesday: Chicken & Sweet Pepper Stir-Fry, Steamed Rice, Spaghetti Squash, Tossed Salad, Leftover pie from Sunday
~Thursday: Crockpot Chili, Buns, Buttered Carrots, Tossed Salad, Chocolate Eclair Squares
~Friday: Maple Balsamic Salmon, Steamed Rice, Pea Pods & Peppers, Pecan Squash, Salad, Rocky Road Cake
~Saturday: Leftover Smorg

I am still hoping... For spring to finally arrive.

I am hearing... The TV playing as the guys are watching a show and the air purifier running.

Around the house... Last minute Easter prep.

One of my favorite things... Holiday celebrations.

A few plans for the rest of the week... Recuperating from the weekend, shopping and puttering around the house.

Oreo Pudding Poke Cake

 
I first saw this on Pinterest
and found the recipe at The Country Cook
It is easy to make and delicious!
The original recipe is made in a 9x13 pan
but that is too large for us right now
so I made it smaller and got a second cake for the freezer.
 
 
Ingredients
1 box chocolate cake mix
Ingredients to make cake mix (water, oil, eggs)
1 pkg (4-servings) Oreo Instant Pudding
2 cups milk
1 tub Cool Whip
Oreo Cookies (to crumble - I used 3 cookies)
 
 
Make cake mix according to the directions on the box.
Pour into two greased 8- or 9-inch square or round pans.
Bake according to the directions on the box.
 
 
When the cake comes out of the oven
quickly mix up the pudding.
In a medium bowl whisk together the pudding mix and milk
for approximately 2 minutes.
Poke holes about 1-inch apart into the warm cake
using the handle of a wooden spoon.
Pour the pudding over top of the cake,
using a spoon to smooth and gently push pudding down into the holes.
Refrigerate.
 
 
When the cake is cooled top with the Cool Whip
and the crushed Oreos.
Refrigerate until ready to serve.
 
 
With the other chocolate cake
I iced with chocolate icing, added some sprinkles
and it is ready for the freezer for a rainy day.

Tulip Brights

 
I usually enjoy winter
but this year it seems to be
extra long and dreary.
 
 
With snow every few days it feels like spring will never come.
 
 
But even if there aren't any signs of spring outside,
that doesn't mean I can't make it spring inside!
 
 
This spring I seem drawn to the bright, bold colors
of red, orange and yellow.
 
 
They are such a nice contrast against the grey skies outside.
 
 
I used orange chargers and my red plates with white accents.
I just love how the inside of the bowl is red while the outside is white.
Yellow and orange napkins overflow from the spring glass.
 
 
It's a perfect table to brighten my day!

This Is Our Spring

 
According to the calendar it is spring
although it has been hard to find any signs of spring when I look in the yard.
 
 
But I keep hoping and keep looking.
I know spring will arrive eventually,
even if it is slow this year.
 
 
I was planning on taking a short blogging break over Christmas
while my daughter was home.
That blogging break extended a lot longer than I had anticipated.
Life got busy as we decided to tackle a redo of our living room
(sneak peak pictures to come)
 
 
But I have missed it and it is time to begin again.
It may take me a bit of time to get back into the swing of things
but I am glad to be back :)

Outside my window... The sky is grey and there is a slight breeze and gentle snow falling and it is cold.

I am thinking... Of how it feels like spring will never arrive.

I am thankful for... Hubbies who give an extra hand when you are feeling sick.

From the kitchen...
~Today: Ham, Scalloped Potatoes, Buns, Broccoli & Cauliflower, Corn, Salad,  Hot Fudge Pudding Cake
~Monday: Sausage and Veggie Bake, Tossed Salad, Banana Cream Pie
~Tuesday: Lemon Pepper Basa, Herbed Noodles, Asparagus, Salad, Chocolate Cake
~Wednesday: Lasagna, Garlic Bread, Ceasar Salad, Hot Fudge Pudding Cake
~Thursday: Crockpot Chicken Stew, Biscuits, Carrots,, Salad, Banana Cream Pie
~Friday: Homemade Pizza, Wings, Ceasar Salad, Garlic Bread, Chocolate Cake
~Saturday: Leftover Smorg

I am wearing... Jeans, Purple Tank, Deep Blue Sweater

I am praying for... Health as most of us are under the weather
