I love omelettes.
However, I do not like making omelettes.
I fnd them kind of finicky to make
first thing in the morning
when I'm not quite fully awake.
When I saw this recipe at Kraft Foods
I thought I would try it
and see if it would satisfy my omelette craving.
It did and not only that it was pretty simple and quick to make.
This recipe has gone into my regular recipe rotation for breakfasts.
Ingredients
4 eggs
1/2 cup milk
3 Tbsp flour
1/2 red pepper, finely chopped
2 sliced bacon, cooked, crumbled
(just a note - I used leftover bacon I had in the fridge and also added in some chopped ham)
1 green onion, finely chopped
1/2 tsp dried oregano leaves, crushed
1/2 cup marble cheese
1/2 cup salsa, warmed.
Heat oven to 350F.
Line 13x9x1-inch pan wtih parchment paper,
with ends extending over shortest sides of pan.
Spray with cooking spray.
Beat eggs, milk and flour in large bowl with whisk until blended.
Stir in next 4 ingredients; pour into prepared pan.
Bake 14 to 16 minutes or until edges are almost set.
Top with cheese; bake 2 minutes or until melted.
Roll up omelette immediately,
starting at one short end and
peeling off paper as omelette is rolled.
Place on platter; cut into slices.
Serve with salsa.
Serves: 4
