Parmesan Fish Fillets

 
These Parmesan Fish Fillets take a few extra steps
but the flavor is so worth it!
 
 
Ingredients
1-1/2 cups dried  bread crumbs
1/2 cup grated Parmesan cheese
4 tsp. dried parsley flakes
1/2 tsp. paprika
2 eggs
2 Tbsp. water
2 Tbsp. lemon juice
2 lbs. fish fillets (1/4 to 1/2-inch thick)
cooking spray

 
Heat oven to 350F.  Spray 15x10x1-inch baking pan with cooking spray.
In shallow bowl, combine bread crumbs, Parmesan cheese, parsley flakes and paprika; blend well.
In another shallow bowl, combine egg, water and lemon juice; beat well.

 
Cut fish fillets into serving-sized pieces.
Dip in egg mixture; coat with bread crumb mixture.
Place fish in sprayed pan.


Bake at 350F for 10-15 minutes or until fish flakes easily with fork.
