This is a great recipe if you have any leftover roast beef or pork.
It is quick to make so it is perfect for a lunch
or for a supper when you're crunched for time.
I found the original recipe at Kraft Kitchens.
Ingredients
2 eggs
2 tsp. water
4 Tbsp. Asian Sesame dressing
2 cups cooked, chopped roast beef or pork roast
2 2/3 cups hot cooked long-grain white rice
2 Tbsp. soy sauce
2 carrots, shredded
4 green onions, thinly sliced
4 Tbsp chopped dry-roasted peanuts
Beat egg and water with fork until well blended.
Add to large nonstick skillet;
cook on medium heat 1 to 2 min. or until set.
Transfer to bowl; cut into small pieces.
Wipe skillet with paper towel.
Add dressing and meat to skillet;
stir-fry on medium-high heat 2 min.
Add rice and soy sauce; stir-fry 3 min.
Add carrots and onions; stir-fry 1 min. or until heated through.
Remove from heat; stir in egg.
Top with nuts.
Serves: 4
Total Time: 25 minutes
