Mushroom Meatballs

 
With cool mornings and crisp fall evenings
it is time to bring out some of my favorite cool weather recipes.
I don't remember where the original recipe came from
but this is a quick and easy way to make Mushroom Meatballs
and is perfect with mashed potatoes
for an ultimate comfort food meal.
 
 
Ingredients
2 (10-oz) cans cream of mushroom soup
1/2 cup water
1 lb. ground beef
1/3 cup oatmeal
2 Tbsp. minced onion
1 Tbsp. parsley flakes
1 egg
 
 
In small bowl mix together beef, oatmeal, onion, parsley and egg.
Shape into meatballs and place in a casserole dish.
 
 
Mix together soup and water.
Pour over meatballs.
Bake, covered, in 350F oven for approximately 1 hour or until done.
 
 
I usually serve this with mashed potatoes
but it is also very good served with egg noodles!
