These cookies are filled with yummy goodness
and are perfect for lunchboxes
or college student parcels
or for just enjoying on a cool fall afternoon
with a cup of tea.
Ingredients
1-1/2 cups brown sugar
1 cup margarine or butter, softened
1 Tbsp. milk
1 Tbsp. vanilla
2 eggs
2-1/4 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt (optional)
2 cups rolled oats
1 cup coconut
1 (10-oz.) pkg. baking M&Ms
Heat oven to 375F.
In large bowl, beat brown sugar and margarine until light and fluffy.
Add milk, vanilla, eggs; blend well.
Stir in flour, baking powder, baking soda and salt; mix well.
Stir in oats, coconut and M&Ms.
Drop by rounded tablespoonfuls 2-inches apart onto ungreased cookie sheets.
Bake at 375F for 9-13 minutes or until light golden brown.
Cool 1 minutes; remove from cookie sheets.
Cool completely.
Yields: 4 dozen cookies
