I came across this recipe at The Taste of Home website.
Since I love orange flavored ice cream I knew I had to give this a try.
I changed it from the original recipe because I didn't want
the large amount it made.
Ingredients
2 cups graham cracker crumbs
1/3 cup sugar
1/2 cup butter, melted
5 cups vanilla ice cream, softened
1 can (283mL) frozen orange juice concentrate, thawed
In a bowl, combine cracker crumbs and sugar; stir in butter.
Set aside 1 cup for topping.
Press remaining crumb mixture into a 15x10x1-inch pan
lined with wax paper and greased.
(It was very thinly covered and I used the back of a spoon to get
a nice firm and smooth look)
Cover and freeze for at least 10 minutes.
In a large bowl combine ice cream and orange juice concentrate until smooth. Spoon over crust.
Freeze for 10 minutes or until partially firm.
Sprinkle with reserved crumb mixture; gently press down.
Cover and freeze for up to 2 months.
Remove from the freezer 15 minutes before serving.
Makes 24 servings.

These were tasty but next time I will make a few changes.
I will put the full crumb crust on the bottom
and put on a topping of Cool Whip.
I know it will remind me of one of my favorite treats,
a Creamsicle!
