It is getting to that time of year
when I go through my pantry
and try to use up anything
that is still there from the past year.
Well, I still seem to have quite a bit of peach jam
so I came up with this recipe
based loosely on an old recipe
that I made way back
when I took Home Economics
in school.
Ingredients
2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 eggs
1/4 tsp vanilla
1/2 cup milk
1/2 cup butter, melted
1/2 cup peach jam
Streusel Topping
1/8 cup shredded coconut
1/8 cup crushed almonds
3 Tbsp flour
3 Tbsp sugar
3 Tbsp butter, softened
1/4 tsp nutmeg
Prepare streusel topping and set aside.
In large bowl mix flour, sugar, baking powder, cinnamon and salt.
In small bowl beat eggs with fork;
add in vanilla, milk and butter.
Add to flour mixture,
stir just until blended.
Fill greased muffin pans 1/3 cup full;
top with jam
(I used a good Tbsp and it helps if you make a small indentation to put the jam in)
Add more batter to fill pans 2/3 full.
Top with streusal topping.
(This topping was like a very thick paste,
I put a tsp on and smoothed the top with the back of the spoon)
Bake in preheated 400F oven until done
approximately 15-20 minutes.
Makes 8 muffins.
These are delicious and I'm glad it only made 8
because I wanted to eat them all :)
They are great to have on hand
for breakfast!
