I hope everyone had a great Mother's Day!
When I came across this recipe at Cooking with Karyn
it just looked so yummy that I had to give it a try.
Ingredients
1 cup quick-cooking rolled oats
1/2 tsp. vanilla
1 tsp. cinnamon
1 Tbsp. brown sugar
1/2 cup applesauce
1/2 cup milk
dash of salt
Cream Cheese Sauce
2 oz. soft cream cheese
2 Tbsp. milk
1 Tbsp. sugar
1/4 tsp. vanilla
Mix all ingredients together and pour into ramekin dishes.
(The original recipe did not say how many dishes.
I used two but next time I would divide it into three dishes)
Bake at 375F for 20 minutes.
Top with cream cheese sauce.
While the oatmeal is baking mix together the ingredients
for the cream cheese sauce.
Mix well. You will want to use a whisk for this
because the cream cheese lumps are tough to mix in.
(I let it sit over the warming plate
while the Oatmeal cooked to help
soften the cream cheese and then
remixed it just before pouring over the oatmeal)
Pour over the top of cooked oatmeal.
We had some fresh strawberries so I added some on top.
Delicious!
